Coffee is a wild ride. It fluctuates – beans, regions, seasons, weather, aging - all change and affect the flavour in the cup. As roasters & makers of specialty coffee, we’re required to be wide awake to these many changes, some subtle, some dramatic. 22 grams, is the amount of coffee we put in each basket when making a coffee. It's as simple as that, except we actually measure it...

Everything we do is done from scratch, with an irrational amount of care. All our chicken and eggs are free-range and the fruit and veggies are locally grown where possible. We’re as fussy about food as we are about our coffee. Which says a lot.

While borrowing from tradition we are not beholden to it ... we are continually evolving following the latest in food science & our own intuitions continuing the search for ever flakier, lighter, crisper horizons.
